Lynn's Italian Love Cake

 

1 pkg chocolate fudge cake mix

 

2 pints Ricotta cheese

 

3/4 cup sugar

 

1 teaspoon vanilla extract

 

4 eggs

 

topping:

 

1 cup milk

 

1 pkg instant chocolate pudding

 

1 - 12oz container of cool whip

 

 

Make cake mix according to package directions pour into 13x9 inch pan.  In a separate bowl mix ricotta, eggs, sugar and vanilla until well blended.  Spoon over top over cake mix in pan.  Bake @ 350 for one hour and 15 minutes.  I always double check with a toothpick to see if it comes out clean to make sure it is done on the center. For the topping blend pudding mix and milk together until thickened then fold in cool whip.  Spoon over completely cooled cake.  This cake tastes best when it is very cold.  It also can be made a couple days ahead of time as it tastes better the longer it sits in the fridge.
